Remember when Buffalo chicken dip exploded onto the food scene and there wasn’t a party without it? It was one of those dishes that wasn’t very popular, then boom, it was everywhere. In the traditional version, shredded chicken, cream cheese and Buffalo sauce are mixed together and then baked into a hot and gooey dip. Everyone has a friend who makes it (or you are that friend).

While it’s a great dip, it’s heavy and full of fat. Our version lightens things up by substituting white beans for the cream cheese and chicken. Combine celery, red onion and Randall Beans with your favorite Buffalo sauce, then top with bleu cheese crumbles. This dip goes great with crisp sliced veggies, toasted pita squares or even spread onto crostini. Buffalo bean dip is everything you love about traditional wings without the fat and calories.

Game Day Dip

Buffalo Bean Dip

 

1 stalk of celery, chopped
2 tbsp red onion, chopped
1/4 cup of your favorite Buffalo sauce
2 cups Randall Great Northern Beans, some of the liquid reserved

Add all ingredients to a food processor or blender. Puree to desired consistency.

Garnish with bleu cheese crumbles to complete the dish and serve with sliced veggies or pita chips.
