Why should red, tomato-y chili get all the glory? It’s delicious in its own right, but all that beef and rich sauce can be heavy. Why not try something lighter this winter? White chicken chili has long been a favorite of ours, with its chicken stock base, tender shreds of chicken and white beans. We’ve rounded up some of our favorite recipes for this delicious delight.

 

Randall Beans White Chicken Chili with Great Northern Beans

This is our family’s secret recipe. Plain, simple ingredients make it so darn tasty: Randall Great Northern beans, roasted chicken, just a hint of bright, fresh heat from jalapenos. We’ve kept with the overall white theme by using white cheddar cheese at the very end to chicken things up and make this an ooey gooey treat. Of course, you can leave the cheese out for a much healthier treat, but it’s okay. Be a little bad.

 

5-Ingredient White Chicken Chili

This is your go-to recipe when you have no time and no energy. It takes just five ingredients (chicken broth, chicken, great northern beans, salsa verde, cumin, salt, pepper, done) and 15 minutes to bring together. You can use leftover chicken from last night’s dinner, or grab a rotisserie chicken from the grocery store and shred the meat for a quick and delicious solution. Likewise, you can make your own salsa verde using tomatillos, but there is no shame in grabbing a pre-made jar from the store and dumping that in. If you feel like fancying things up, you might add diced avocado for a creamy counterpoint.
