Zesty White Bean Salad

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 lemon (1/2 teaspoon grated lemon zest, 1 tablespoon lemon juice)
  • 1/2 teaspoon honey
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh chives, chopped
  • 1/4 teaspoon salt, to taste
  • 1/2 cup chopped red onion
  • 1 1/4 cups of Randall Great Northern Beans, drained and rinsed
  • 1 cup peas

Instructions

  1. 1 cup roughly chopped fresh spinach
  2. Whisk together olive oil, lemon zest, lemon juice, honey, garlic powder, chives, and salt in a medium bowl.
  3. Add red onion, beans, peas, and spinach to the bowl and mix gently.
  4. Cover and refrigerate at least one hour, then serve. Store leftovers in an airtight container.
