It combines tender Randall Mixed Beans, sweet red peppers and onions with an unexpected hint of ketchup. When all of the ingredients are baked together with shredded cheese, they make one seriously good casserole. You can serve this bean and cheese bake as the main dish or even as a side dish with roasted chicken or pork tenderloin. You might even want to try serving it for breakfast or brunch – you’ll definitely get a lot of mileage out of this dish.

 

Hearty Bean and Cheese Casserole

Ingredients

  • 1 1/8 cups Randall Mixed Beans, drained and rinsed
  • 1/4 cup chopped sweet red pepper
  • 1 medium onion, chopped
  • 3 tablespoons ketchup
  • 3 tablespoons whole wheat flour
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups milk
  • 1/4 cup slivered almonds
  • 1 tablespoon butter (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine Randall Beans, pepper, onion, ketchup, and flour in a greased shallow 2 quart casserole. Add 1 cup cheese. Pour milk over bean mixture, top with remaining cheese, and sprinkle with almonds. Dot with butter if desired.
  3. Bake uncovered for 30 minutes until sauce is thickened and bubbling. As it cools, the sauce will thicken further. Serves 4 to 6.
