Tortellini White Bean Soup

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 large onion, chopped
  • 2 teaspoons garlic, chopped
  • 1 ½ cups carrots, chopped
  • 2 32 oz. containers of vegetable broth
  • 1 tablespoon celery seed
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • 3 bay leaves
  • 8 oz. package cheese tortellini
  • 5 – 7 small red potatoes, skin on, cut in to half inch pieces
  • 1 1/4 cups Randall Great Northern Beans, drained and rinsed
  • 1 ½ cups corn
  • ½ of a 6.35 oz jar of pesto

Instructions

  1. Cook onion in olive oil over medium heat for ten minutes or until onions are translucent.
  2. Turn heat to low, add garlic and cook for one minute stirring constantly.
  3. Add carrots, broth, celery seed, salt, pepper and bay leaves. Stir to combine, bring to a boil and then simmer on low-medium heat for ten minutes.
  4. Stir in tortellini and potatoes and continue to simmer for fifteen minutes.
  5. Add beans, corn and pesto and continue cooking for five minutes or until tortellini are tender.
  6. Remove bay leaves and enjoy! Makes 8 servings.
