As the name would have you believe, it is an easy, wonderful and healthy mishmash of the odds and ends you have in the fridge and in the pantry that separately don’t make a meal. But, when combined together on top of a fresh bed of lettuce make a quick-fix for dinner time.

A bed of lettuce and Randall Great Northern Beans are a must, but the rest of the salad can flexible depending on your desired tastes and what you have available. Our featured dish is filled with some of our favorites: heart of palm, carrots, olives, cucumbers and more! Make as much as you want and save the rest for a snack later or a nutritious and healthy lunch the next day.

Pantry Salad with Beans

Ingredients

  • 1/2 cup Randall Great Northern Beans, rinsed
  • 2 cups iceberg lettuce, chopped
  • 1 can hearts of palm
  • 1 can olive slices
  • 1 can artichoke bottoms
  • 1/2 English cucumber, sliced
  • 2 Peppers ( one orange and one green)
  • Handful baby carrots

Instructions

  1. Mix ingredients together and serve over lettuce.
