Tuna salad is so versatile and delicious!

It is perfect on crackers, as a sandwich on bread or toast, salad and even just on its own. So, imagine how good it could be when with a Greek twist?

Well thanks to our food blogger Ashleigh, you don’t have to wonder anymore. She took a very traditional tuna salad recipe and gave it a kick in the pants! Ashleigh’s seemingly minor additions give this tuna salad recipe a whole new flavor.

First, she added Randall Bean Garbanzo Beans to give it a slightly nuttier flavor and give this tuna salad a little more texture. Often, the unexciting texture of tuna salad can be a detriment to this dish. Ashleigh also substituted Greek yogurt for mayo as the creamy binding. The Greek yogurt gives this tuna salad recipe a lighter texture and helps make it a little more guilt-free. If you aren’t a fan of Greek yogurt, just substitute a light mayo.

Finally, she added some chopped cucumber to the mix for a little more texture. The cucumber combines well with the Greek yogurt, giving this recipe a tzatziki flavor. Top this dish off with some crumbled feta and we are talking about 100% awesome, Greek-inspired tuna salad to serve up to your friends and family.

This recipe takes no time at all to prepare and stores well in the fridge for several days. It makes for a terrific and guilt-free snack with crackers or a great packed lunch for you or the kids.

Greek Tuna Salad with Garbanzo Beans

Ingredients

  • ½ cup Greek yogurt or light mayo
  • 1 tsp. lemon juice
  • 1 tsp. dill
  • 2 cans tuna in water, drained
  • ½ cup English cucumber, diced into small bites
  • ½ cup chopped red onion
  • ½ cup chopped red pepper
  • 1 14-oz jar Randall Beans Garbanzo Beans
  • 1 roma tomato, seeded and chopped
  • 2 hard boiled eggs, chopped
  • 1 Tbsp. feta
  • Salt & Pepper, to taste

Instructions

  1. In a medium bowl, add lemon juice, mayo and dill. Mix with a fork.
  2. Add remaining ingredients, aside from feta. Slowly combine.
  3. Season with salt & pepper, to taste. Sprinkle with feta.
  4. Allow to chill for 20 minutes before serving.
