Chances are you can likely whip this dish together with ingredients you already have in your pantry or fridge, so you won’t have to run back out to the store! Chop up some of your favorite green, red or yellow peppers and onion and mix it up with some of Randall Beans’ famous mixed beans. Don’t forget the bacon, of course.

Casseroles are often thought to be cold-weather cooking. But, this recipe is one of our year-round favorites. Cheesy Southern Bean and Bacon Casserole

Ingredients

  • 6 to 8 strips bacon, diced
  • 2 cups Randall Ultimate 4-Bean Mixed Beans, rinsed and drained
  • 3/4 cup brown sugar
  • 8 oz tomato sauce
  • 1 Tbsp. mustard
  • 1 cup shredded cheddar or colby jack cheese
  • 1 chopped onion
  • 1 chopped green or red pepper (or half and half for variety)

Instructions

  1. Preheat oven to 350 degrees.
  2. Fry the bacon until crisp. Drain and stir into the Randall Beans. Stir in the sugar, tomato sauce, mustard, onions and peppers. Place into a well greased 2-quart casserole.
  3. Top with cheese evenly. Bake for 1 hour.
