Ready For the Big Game: Randall’s White Bean Dip

Ingredients

  • 1 1/2 cups Randall Great Northern Beans
  • 4 slices uncured peppered bacon
  • 2 garlic cloves, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped
  • 2 tbsp fresh rosemary
  • 3 tbsp olive oil

Instructions

  1. Drain and rinse the beans. Add to a food processor with garlic, lemon juice, parsley and rosemary. Cut the bacon into small pieces and cook.
  2. Let cool and then add to the food processor, saving a handful for garnish. Blend until combined.
  3. With the food processor on, pour the olive oil until the mixture is smooth. Spoon into a bowl and sprinkle with the remaining bacon. Serve with pita chips for dipping.
