Our clocks have sprung forward, the birds are chirping and spring is in the air.

While we can’t wait to start making baked beans and bean salads, we’re going to miss some of our favorite winter soups and stews. So while Mother Nature continues this year’s slow tease into Spring,  let’s take one last look at some scrumptious bean recipes for those chilly spring evenings:

Chipotle Bean with Bacon Soup

Bean with bacon soup is classic comfort food, but this spicy version will have you seeing the staple in a whole new light. Great northern beans are cooked with vegetables, tomato paste and of course bacon, but the surprise comes from the smoky, spicy chipotle pepper in adobo sauce. This one will clear your sinuses and have everyone coming back for seconds!

Beef, Kale and Pinto Bean Stew

There’s nothing like a thick, spicy stew to get you through these last cool days of the year. This recipe will have you warm inside and out. Traditional stew ingredients like beef, pinto beans and kale are given a whole new life when you add red chile powder, coriander, and garam masala, the distinctive and spicy Indian spice blend. When you cook this recipe in a pressure cooker, you’ll have dinner in less than an hour, but it’ll taste like you cooked all day.

Creamy White Bean and Pesto Soup

Ease out of winter with this spring-inspired soup. This bright green, creamy soup doesn’t  have a drop of dairy (though it’d be great garnished with some Parmesan cheese). Instead, it gets its thickness and body from pureed white beans, its nutritional value and shocking color from spinach and its delicious taste from onions, garlic and just a hint of nutmeg.
