Here’s a tip for all family cooks out there- it’s still ok to eat soup during the Spring!

Soups are a great way to use the leftover beans you’ve got sitting in your pantry or fridge from the long winter months. It’s easy to throw together all of the ingredients taking up space in your kitchen with your favorite type of Randall Beans and create a delicious meal.

This Garbanzo bean dish is silky smooth and packed with a deep flavor. Incorporating a classic chicken broth into the red sauce, this soup combines the heartiness of kale and sausage with the filling base of Garbanzo beans. After mixing the liquid base, we like to tear the kale into really small pieces and add it in with the sausage bits. This allows the leafy greens to slurp down easily and be less noticeable with picky eaters.

Soup this colorful, spicy and full of flavor is sure to please. Don’t forget to serve warm and with plenty of yummy bread!

 

Ingredients:

Garbanzo Beans, Kale and Sausage Soup

Ingredients

  • 2 tbsp olive oil
  • ½ yellow onion, diced
  • 1 pound pork sausage
  • 2 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 1 tsp cumin
  • 1 quart chicken stock
  • 1 cup crushed tomatoes
  • 3 cups of Randall Beans Garbanzo Beans, rinsed
  • 1 bunch kale, de-stemmed and rinsed thoroughly

Instructions

  1. In a large stock pot, add the olive oil and turn to medium heat. Add the diced onion and cook for 2-3 minutes. Remove the pork from it's casings (if using links), crumble into the stock pot and allow the sausage to brown.
  2. Add the minced garlic, red pepper flakes and cumin. Stir to combine, then add the chicken stock, crushed tomatoes and Randall Beans Garbanzo Beans. Bring the soup to a boil, then simmer covered for 20 minutes.
  3. Add the cleaned kale pieces to the soup pot and cook for five minutes or until kale is tender. Taste for seasonings and serve.

This dish has a bit of an international flavor combining the garbanzo bean which is often associated with middle eastern dishes and the chorizo sausage which is more of a southwestern flavor.
