Around the World Bulgarian Bean Salad

Ingredients

Scale
  • Shopska Sauce
  • 1.5 cups plain Greek yogurt
  • 3/4 cup feta cheese
  • 1 tablespoon olive oil
  • Salt and Pepper

Salad

  • 2 red peppers, cut into 1” cubes
  • 1 sweet onion, cut into 1” cubes
  • 1 shallot, finely chopped
  • 3 cloves of garlic, finely chopped
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 2 cups drained Randall Pinto Beans
  • 1/2 teaspoon balsamic vinegar

Instructions

  1. To make sauce put all ingredients in a blender. Blend until smooth.
  2. To make the salad, heat olive oil and butter over high heat until shimmering. Add onions and peppers. Saute until soft and then add garlic. Continue to sauté until vegetables brown a bit. Add pinto beans and vinegar and warm through.
  3. Plate warm vegetables and beans. Top with shopska sauce.
