You’ve probably had it happen at least once, you get invited to a pitch in and end up throwing something together at the last minute that you would rather not put on display. Shameful side dishes no more, we have the perfect recipe for the on-the-fly pitch in dish that will be the hit of the party.
Our new favorite ingredient (second to beans of course) is Brooklyn Delhi’s Achaar. In case this is your first experience with Achaar, it’s best described as a relish made from local vegetables, fruits, chilies, spices and oil – think of it as India’s equivalent to kimchi. Chop up the veggies, toss them in a bowl with the Garlic Roasted Achaar and your simple salsa transforms into a tangy, spicy, sweet and savory side dish perfect for friend and family get-togethers.
We would hate to ruin this perfectly healthy side dish with high calorie corn tortilla chips, that’s why we like to pair this recipe with Beanitos bean chips. What better match for bean and corn salsa than bean chips? We like to pair this salsa with the Chipotle BBQ bean chips, but take your pick from the variety of flavors.
Ingredients
- Yellow corn
- Randall Black Beans
- Diced tomatoes
- Red onion
- Red bell pepper
- Lime juice
- Olive oil
- Roasted Garlic Brooklyn Delhi Achaar to taste
Instructions
- Dice the tomatoes, red peppers and onions and mix together, keep adding until the mix is colorful
- Stir together the corn, red peppers, red onion, beans and tomatoes in the bowl
- Pour in the olive oil and achaar until the salad is lightly covered
- Toss mixture
- Drizzle with lime juice to finish
