Like a bump in the night, Halloween has crept up on us here at Randall – the season of pumpkins, witches, and delirious sugar crashes from too much Halloween candy. With everyone dressing up for Halloween parties or trick-or-treating, our beans were feeling a little left out of all the fun. Lydia, friend of the Randall family, thought of the perfect costume, one that no one would ever recognize our beans in: delicious brownies! Don’t be too spooked by the idea of Black Bean Brownies, they’re every bit as rich and delicious as brownies were meant to be.
One ingredient you may find surprisingly missing here is one you’re sure to already have your fill of come Halloween: refined sugar. Substituting some alternative sweetness in the form of maple syrup, this recipe also allows the natural sweet flavors of baked hazelnuts and vanilla to come through to the surface. The addition of cinnamon and espresso powder give the brownies a richer and subtly darker flavor. A lack of sugar in addition to a delicious dark flavor sounds perfect for the night of All Hallow’s Eve. Just don’t get too scared when they’re all gone before you know it.
Ingredients
- ¾ cup Randall Black beans
- ½ cup of olive oil
- 2 eggs
- ½ cup whole hazelnuts
- ¼ cup unsweetened cocoa powder
- 2 tablespoons maple syrup
- 1 teaspoon vanilla
- 1 tablespoon espresso powder
- 1 teaspoon of cinnamon
- 1.5 teaspoons salt
Instructions
- Blend all ingredients together
- Pour batter into greased or lined pan of your choice
- Bake at 350 degrees for at least 20 minutes (depending on pan), check readiness using knife or toothpick
