Holiday White Bean Pie

  • 1 1/8 cups Randall Great Northern Beans, drained and rinsed 
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 2 tablespoon margarine or butter, melted
  • 1 tablespoon light molasses
  • 2 cups evaporated milk
  • 2 9-inch unbaked pie crusts

Instructions

  1. In a food processor, or by hand, puree Randall Beans with 1/4 cup of the evaporated milk.
  2. In a bowl, beat eggs, stir in bean puree and mix well. Stir in brown sugar, white sugar, cinnamon, salt, ginger, nutmeg, cloves, melted butter, molasses, and remaining milk. Mix well.
  3. Pour mixture into unbaked pie shells. Bake in 425 degree oven for 15 minutes, lower oven to 350 degrees and continue baking for approximately 45 to 50 minutes until done.
  4. Test for doneness: When silver knife inserted into center of pie is removed, it should come out clean. Center may look soft, but will set later.
  5. Serve slightly warm or cold topped with sweetened whipped cream.
  6. Makes 2 9-inch pies.
