This bean salsa is the perfect blend of heat and flavor during January, and it’s simple to get the home grown ingredients right in your town, at your local grocer or farmer’s market. Easy to make and easier to eat, it’s the perfect companion to a gathering or just after a long chore of shoveling the driveway. It’s bound to be a hit with all of your friends and family.

Randall’s Southwestern Bean Salsa

Ingredients

  • 14-oz jar Randall Beans garbanzo beans, rinsed and drained
  • 14-oz jar Randall Beans black beans, rinsed and rained
  • 1 15-oz can diced tomatoes, drained
  • 1 cup corn
  • 1 cup diced green bell pepper
  • ¾ cup diced red onion
  • ¾ cup chopped fresh cilantro
  • 2 teaspoons cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 2 tablespoons fresh lime juice

Instructions

  1. In a large bowl, combine all of the ingredients together and stir, thoroughly mixing the spices into the rest of the salsa ingredients.
  2. Serve with tortilla chips.
