Tortellini Bean Soup.4s

There’s never a wrong time of year for Italian-inspired cooking. With rich flavors and tantalizing aromas, Italian cooking is basically the reason the kitchen was invented. Though beans may not be the first ingredient to come to mind when thinking of Italian cuisine, white beans in particular are an innate staple of the classic Italian diet. For that reason, our newest food blogger Tuesday Strong has given us this recipe for a hearty tortellini and white bean soup.

Scrumptious cheesy pasta and delicious red potatoes make for a tasty base to this dish, with celery seed and pesto combining with the earthy flavor of the beans lending a rich flavor. Completely vegetarian and nutritious, it’s the perfect meal for a family dinner with minimal prep and cook time. Pair it with seasoned and baked pita bread for the perfect sidekick that can also sop up the leftover soup! Visit Tuesday’s food blog at Tuesday Cooks for more inspired vegetarian dishes!
