Summer salads are still in fashion and we’re sharing one of our favorite with you!
There’s something special about the flavors of the Mediterranean. Whether it’s the zest and zing of the spice and oils or the absolute freshness of the ingredients, these Greek-inspired dishes are never anything short of delicious. This bean salad is a great example of mixing western and Mediterranean flavors.
There are three beans playing a prominent role in this summer salad: Garbanzo, Kidney, and green beans. Randall’s fresh Garbanzo and Kidney beans taste great alongside fresh green beans from your local farmer’s market. In fact, we suggest grabbing as many of the ingredients as you can from your weekend farmer’s market, like the balsamic vinegar, natural honey, small red onions, and parsley.
This salad is sure to be a hit at any of your outdoor gatherings, and it gives you an excuse to break out the grill basket! Enjoy.
Ingredients
- 1/3 cup balsamic vinegar
- 2/3 cup olive oil
- ¼ teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1 pound fresh green beans
- ½ small red onion, sliced thin
- 14-oz jar Randall Beans Kidney Beans, rinsed and drained
- 14-oz jar Randall Beans Garbanzo Beans, rinsed and drained
- 2 tablespoons chopped fresh parsley
Instructions
- Whisk together the balsamic vinegar, olive oil, salt, black pepper, lemon juice and honey in a small bowl.
- In a large bowl, toss 4 tablespoons of the dressing with the green beans and red onions. Make a foil boat for the kidney and garbanzo beans. Toss the beans with 4 tablespoons of the dressing. Close the foil boat and place on the grill for 15 minutes.
- Place the green beans and onions in a grill basket and grill for 10 minutes, stirring occasionally.
- Mix all of the green beans, onions, kidney beans and garbanzo beans together and top with the parsley to serve.
