Finding dishes to send with your children to school can be a challenge. Either it doesn’t travel well, needs to be served piping-hot or they just flat out don’t like it — darn kids and their undeveloped taste buds! Randall wants to help you out! We’ve gathered up a couple recipes to make your life easier this year as you prepare packed lunches for your children. These recipes are simple and easy to make, travel well, can be served cold or at room temperature and most importantly are delicious and nutritious!

Garbanzo Chicken Salad

This hearty and healthy chicken salad is perfect for school lunches! It is extremely versatile, able to be served in a bowl and eaten with a fork or it can be easily slapped between two pieces of bread to create a tasty chicken salad sandwich. Randall’s garbanzo beans steal the show, however, giving the salad a nice creamy and rich texture and a hint of nutty flavor mixed in. Healthy grapes, crunchy celery and creamy mayo all do their part too. Can act as a side or as the main course in any bagged lunch.

 

Avocado & White Bean Salad Wrap

This dish comes to you from Kristy Turner at forksoverknives.com and certainly caught our eye as great back to school meal! This recipe utilizes fresh, healthy and delicious fruits and veggies like avocado, lime, Roma tomatoes, green chilies, baby spinach and — of course — great northern beans. You could even add ham or turkey to the wrap to give it a little extra something your kids will love. Easy to make in only about half an hour, these wraps can be easily stored and served in a lunch box. With a variety of rich flavors and textures, this recipe is bound to be a hit!

 

Cucumber, Black Bean, Corn, Tomato & Avocado Salad

Look we know you’re busy, but can we ask you a couple quick questions? Got 15 minutes? Have a cutting board? Have a knife? Cucumber, black beans, corn, tomatoes and avocado all come together to create a brilliantly colorful salad, lit off by a tasty lime vinegarette that is as beautiful as it is delicious! Pinto Beans and Turkey Sausage

Rice and beans: a classic that everyone loves! Well, this one has a little something special to add. All the traditional spices and flavors of traditional rice and beans are accompanied this time by delicious turkey sausage. Serve on the side or mixed in with the rice and beans itself, either way, its lick the plate clean good! Healthy and great tasting, your little learners will be happy to find this packed away in their bags. Try wrapping up tightly and securely to keep it as warm as possible. Don’t worry though, these beans won’t taste any less great cooled down.
