It’s finally football season again!

After the long offseason, your favorite team is ready to hit the gridiron while you hit the couch to watch and root them on. The best thing about watching football from home no doubt is the snacks. Whether you are just entertaining your family, a few friends or the whole neighborhood, no one wants to watch the game on an empty stomach.

Two staple snack options for any Saturday or Sunday football fiesta are nachos and hummus. Both are crowd pleasers, simple and easy to eat. So, why not combine them?

Try this one on for size: Greek Nachos! Yeah, that’s right. We have a great new recipe from food blogger Kate that puts a Mediterranean twist on nachos, combining two members of snack royalty.

Pita chips take the place of nacho chips and are smothered by fresh parsley and tomatoes while olives and feta cheese give them a nice bite of the Mediterranean. Randall chickpeas and an easy-to-make, creamy hummus sauce really set this treat off.

Mediterranean Pita & Chickpeas Nachos

Mediterranean Pita & Chickpeas Nachos

Ingredients

  • Hummus Sauce
  • 1½ cups Randall Beans Garbanzo Beans
  • Juice of ¼ lemon
  • 2 Tbsp. olive oil
  • ¼ cup + 2 Tbsp. water
  • 1 Tbsp. tahini (optional)
  • 1 Tbsp. Sriracha, or chili sauce of your choice (use more or less to taste)
  • 1 garlic clove, minced
  • Salt & pepper to taste (about ¼ - ½ tsp.each)
  • Pita “Nachos”
  • 1 8-oz bag pita chips
  • 1½ cups Randall Beans Garbanzo Beans
  • 1 cup grape tomatoes, halved
  • 4 oz feta cheese, crumbled or chopped
  • ½ cup olives, sliced
  • 4 Tbsp.parsley, chopped

Instructions

  1. 1. Add all the ingredients for the Hummus Sauce to a blender or a small food processor and blend until smooth.
  2. 2. Arrange the pita chips on a large platter or split evenly between two dinner plates. Arrange the chickpeas, grape tomatoes, feta cheese, and olives over the pita chips.
  3. 3. Drizzle with Hummus Sauce and sprinkle with chopped parsley.
  4. Note: Steps 1 and 2 can be prepared in advance. It is best to drizzle the pita chips with hummus sauce right before serving.
