Mom’s Mixed Bean Soup

Ingredients

  • 1/2 pound fully-cooked smoked sausage
  • 6 cups chicken broth
  • 1 cup sliced onion
  • 1 cup chopped celery
  • 3 carrots, sliced in rounds
  • 2 cloves garlic, minced
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon black pepper (or to taste)
  • 1 28-ounce can diced tomatoes
  • 4 1/2 cups Randall Ultimate 4-Bean Mixed Beans, drained and rinsed
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Cut the sausage into bite-sized pieces. In a large pot, combine the sausage, broth, onions, celery, carrots, garlic, seasonings, and tomatoes. Bring to boil. Simmer, partially covered, for 30 minutes. Add the Randall Mixed Beans and cook 15 minutes longer. Add the parsley (if desired). Taste and correct the seasonings.
