Randall Beans Mexican Bean Salad

Ingredients

Dressing:

  • ½ cup chopped cilantro
  • 1 tsp. cumin
  • 1 Tbsp. Aleppo or Chili powder
  • 1 tsp. salt
  • 1 tsp. pepper
  • ¼ cup canola oil
  • ½ cup red wine vinegar
  • 2 limes, juiced

Salad:

  • 1 1/3 cups Randall Pinto Beans, rinsed
  • 1 1/3 cups Randall Ultimate 4-Bean Mixed Beans, rinsed
  • 1 1/3 cups Randall Great Northern Beans, rinsed
  • 16 oz frozen corn
  • 1 cup red onion, finely chopped
  • ½ cup red pepper, chopped
  • ½ cup green pepper, chopped
  • 2 jalapenos, seeded and chopped
  • 4 green onions, sliced

Instructions

  1. In a mason jar, mix all dressing ingredients and shake. Set aside.
  2. Using a large bowl, add all veggies and beans. Toss with a spoon.
  3. Slowly pour dressing over mixture and stir. Cover and let marinade for 20-30 minutes.
