This bean salad recipe comes to us from Lorraine and it is a delightfully simple dish perfect for the summertime.
Light and healthy, this summer bean salad uses this season’s power food, the avocado, along with Randall Beans great northern beans. The beans also play an important role in this dish helping to moderate the acid from the vinegar and citrus, which are also crucial elements in making this bean salad such a summer hit.
As for putting this salad together? It couldn’t be simpler.
Cucumber, avocado and parsley along with Randall Beans make up a fresh, yet hearty base. Cuties (the little oranges) help give the salad a little zest and kick.
For the dressing, Lorraine used white balsamic vinegar as the dressing for extra acidity. But be careful when adding the dressing, she warns. With too much, it is easy to overpower the entire dish. Lorraine suggests adding a tablespoon or two and trying a bite. If you feel like the salad could use a little bit more acidity go ahead and add another tablespoon.
We loved this recipe because it is so simple and a great answer for any last-second side dish needs. A little can go a long way and is the perfect addition to the dinner table or out on the patio.
