Summer can’t be over already, can it?!

Kids are heading back to school for a brand new year (which may be a blessing, am I right?) which means you are now again faced with the task of dealing with school lunches. You’ve basically got two options. You can fork over lunch money day after day that will be used on typically low-quality, processed and unhealthy school-provided lunches. On the other hand, you could send them off to school the right way with homemade, healthier, packable lunches.

But that requires so much more work, doesn’t it? You don’t have time in the morning to prep complicated school lunches. Well, it doesn’t have to be!

Beans are the perfect vehicle for creating simple, delicious and healthy recipes that are perfect for school lunches. Just to prove it, we’ve compiled a couple great packable lunch recipes that are great with Randall Beans. Each one of these can be easily prepared ahead to save you time in the morning and will please the kids at lunch time.

Mediterranean Chickpea Salad Jar

We’ve been obsessed with salads in a jar since we showed you how yo make your own with your leftover Randall Beans jars. This recipe is just as easy, just as tasty and can also be prepared in one of our jars. We got this recipe from Girl of the Bloor and uses Randall Beans garbanzo beans for a fun play on the classic Greek salad. Artichoke hearts, sundried tomatoes, red onion and spices create exciting Mediterranean flavors that will satisfy and expand your child’s palate.

 Taco Pop Tarts

These cute, fun and inventive taco pockets come from Babble and are as much fun to make as they are to eat! Using a simple pie crust and a filling of taco meat, onion, corn, cheese and Randall Beans black beans, these pop tarts are great warm or cold. Make several at once and stick them in lunch boxes or serve them as a great after-school snack. These are a great treat for adults too – you’ll feel like a kid all over again!

Vegetarian Wraps

Wraps are some of the best packed lunch meals. They are easy to pick up and go and even easier to prepare. This recipe from Courtney’s Sweets only takes 6 ingredients and is ready in moments. The simple flavors and ingredients play perfectly with picky eaters and it can be sliced up into rolls to fit better into lunch boxes. Randall Beans black beans, cheese, avocado, rice and tortilla – even the most inexperienced cook couldn’t mess this up!

Apple-Walnut Chickpea Salad Sandwich

Not only is this sandwich from Where You Get Your Protein delicious, it’s gluten-free, oil-free, mayo-free and vegan. Crunchy walnuts and crisp, tasty apples will win even the pickiest eaters over with this sandwich. Randall Beans garbanzo beans serve as binding for the sandwich, avoiding any messy-sandwich problems.
