White Bean Chocolate Chip Cookie Dough

Ingredients

  • 1 1/2 cup Randall Great Northern Beans
  • 1/8 tsp. salt
  • 2 tsp. pure vanilla extract
  • 1/4 cup sunflower seed butter (a.k.a. sunbutter)
  • 1/2 cup brown sugar
  • 5 Tbsp. old-fashioned oats
  • 1/2 cup chocolate chips
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup sunflower seeds

Instructions

  1. Add first 6 ingredients to a food processor and blend until very smooth. Then mix in the chocolate chips, seeds and coconut. Line a muffin pan with cupcake liners. Scoop dough out into liners using a cookie scoop. Put muffin pan into fridge for 30 minutes. Serve chilled.
  2. You can also serve this as a dip at room temperature using pretzels or graham cracker sticks or eat it by the spoonful. No one will ever guess there are beans in it! These store well in the freezer. Feel free to add less brown sugar or substitute it for honey.
