White Bean Provencal

Ingredients

  • 2 cups of Randal Great Northern Beans, drained and rinsed
  • 3 Tbsp. extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 cup chopped onion
  • 1 14.5-oz. can tomatoes, diced and drained
  • 1 cup sliced mushrooms
  • 1 tsp. salt (or to taste)
  • 1/4 tsp. black pepper
  • 2 Tbsp. lemon juice
  • Chopped scallions for garnish

Instructions

  1. In a skillet, sauté garlic and onion in oil 5 minutes over medium heat.
  2. Add tomatoes and mushrooms, cooking 5 minutes longer.
  3. Add beans and cook over low heat, 5 more minutes, stirring occasionally.
  4. Season with salt, pepper and lemon juice. Add scallions for garnish if desired.
  5. Serve hot or cold.
