Gooey Cheesy White Bean Tomato Bake

Great food is an integral part of the fall and winter holiday seasons. This baked bean dish is filled with nutritious and creamy Randall Great Northern Beans, fire-roasted tomatoes, and two kinds of gooey melted cheese for a comfort-food quick dinner or a party appetizer!


  • 2 Tbsp of olive oil
  • 3 cloves of garlic, thinly sliced
  • 15oz can of fire-roasted tomatoes
  • 1 tsp of Italian seasoning
  • ½ tsp of sea salt
  • ½ tsp of pepper
  • 3 cups of Randall Great Northern Beans, drained except for ¼ cup of liquid
  • 2 cups of fresh baby spinach
  • 2½ Tbsp of fresh basil, thinly sliced
  • ½ cup of Parmesan cheese, grated
  • 2 cups of mozzarella cheese, grated


  1. Preheat the oven to 400 degrees F.
  2. Heat the oil in a large oven-safe pan over medium-high heat. Add the garlic and cook for 1 minute. 
  3. Add the fire-roasted tomatoes, Italian seasoning, salt, and pepper and stir. Taste and add more salt and pepper if you’d like.
  4. Stir in the Randall Great Northern Beans and saved liquid and bring everything to a simmer. 
  5. Add the spinach and let it wilt, then stir in the basil. 
  6. Remove the pan from the heat and sprinkle the parmesan cheese and mozzarella over the top.
  7. Place the pan in the oven and bake for 5-10 minutes, or until the cheese has melted and the beans are bubbling. For an extra golden top, broil for 2 minutes.
