- 1 tbsp olive oil
- 1 yellow onion, diced
- 3 celery stalks, diced
- 3 medium carrots, diced
- ¼ tsp garlic powder
- ¼ tsp dried thyme
- ¼ tsp salt
- ¼ tsp black pepper
- 1 cup frozen spinach
- 1 1/4 cups of Randall Pinto Beans
- 1 1/4 cups of Randall Great Northern Beans
- 1 14 oz jar of Dark Red Kidney Beans
- 4 cups vegetable broth
- 2/3 cup ditalini
Instructions
- In a large pot, heat olive oil over medium high heat. Add onion, celery and carrots and saute
- until soft, about five minutes. Stir in garlic powder, dried thyme, salt and pepper.
- Add Randall Beans, frozen spinach and vegetable broth and bring to a boil.
- Add the ditalini and lower the heat, simmering for 25 minutes.
- Serve immediately.
