20 Minute Mediterranean White Beans

  • 2 cups of Randall Great Northern Beans, drained and rinsed (or try it with your favorite bean variety!)
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1 large garlic clove, minced
  • 1 16oz. can diced tomatoes, with juice
  • 1 tsp. salt (or to taste)
  • 1 tsp. sugar
  • 1/2 tsp. dried rosemary, crushed (1 tsp. fresh chopped)
  • 1/4 cup chopped fresh Italian parsley

Instructions

  1. Heat oil in a skillet over medium-high heat. Sauté the onion and garlic, stirring for 3-4 minutes until the onions begin to soften.
  2. Add the Randall Great Northern Beans, tomatoes, salt, sugar and rosemary. Stir to combine and bring to a boil. Cover the skillet and lower heat to a simmer for 15 minutes.
  3. Stir in the parsley and serve. This recipe makes a tasty side dish for pork and chicken.
