Everyone has a favorite recipe. Maybe because it’s easy to make and you can whip it up by memory? Maybe it’s something that your mom used to make and gives you that warm and fuzzy feeling whenever you eat it? Maybe it’s a recipe that’s been passed down generation after generation?

Maybe, it’s just because it’s really, really good?

Well, this recipe is one of our all-time favorites and the reason is a little bit of all of the above. This simple and tasty preparation of our hearty and flavorful great northern beans was once upon a time listed right there on the back of our jars and is one of our heirloom recipes.

This recipe is a catch-all for whatever beans you have stocked in your pantry.

Great northern beans, pinto beans, mixed beans, garbanzo beans, navy beans, whatever you’ve got it will go great in this recipe.

This dish is all about big flavors and simple preparation. Caramelized onions, sweet tomatoes and fresh herbs all come together and blend perfectly with the creaminess of the beans. That’s one of the big reasons we love white beans for this dish because of their heartiness and extra creamy flavors.

Combine all the ingredients and in 20 minutes you will be ready to chow down a simple dish with flavors that are anything but! This dish is great as a side dish to pork or chicken and is also a nice small meal all on its own.

20 Minute Mediterranean White Beans


  • 2 cups of Randall Great Northern Beans, drained and rinsed (or try it with your favorite bean variety!)
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1 large garlic clove, minced
  • 1 16oz. can diced tomatoes, with juice
  • 1 tsp. salt (or to taste)
  • 1 tsp. sugar
  • 1/2 tsp. dried rosemary, crushed (1 tsp. fresh chopped)
  • 1/4 cup chopped fresh Italian parsley


  1. Heat oil in a skillet over medium-high heat. Sauté the onion and garlic, stirring for 3-4 minutes until the onions begin to soften.
  2. Add the Randall Great Northern Beans, tomatoes, salt, sugar and rosemary. Stir to combine and bring to a boil. Cover the skillet and lower heat to a simmer for 15 minutes.
  3. Stir in the parsley and serve. This recipe makes a tasty side dish for pork and chicken.
