Roasted Garlic and Dill Bean Spread with Smoked Salmon

  • 1 1/2 cups Randall Great Northern Beans, drained
  • 15 cloves roasted garlic
  • 1/2 tsp. salt
  • 1/8 tsp. white ground pepper
  • 1 Tbsp. fresh dill
  • 1 tsp. lemon juice
  • Thinly sliced smoked salmon
  • Slices of rye bread

Instructions

  1. To roast the garlic, preheat your oven to 400 degrees while you peel and discard the papery outer layer of the garlic bulb. Using a knife, cut about 1/4 inch off the top of the bulb so the individual cloves are exposed.
  2. Set on a baking sheet, drizzle with olive oil and cover with tin foil. Bake for 30-40 minutes or until the cloves are lightly browned and soft. Let cool and remove each clove with a fork.
  3. Drain the liquid from the beans but do not rinse them. Place them in a food processor with the roasted garlic, salt, white ground pepper, dill and lemon juice. Process for about 20 seconds or until smooth.
  4. Spread onto rye bread and top with two slices of smoked salmon and additional pieces of fresh dill if desired.
