Ingredients

- 2 Tbsp of olive oil
- 3 cloves of garlic, thinly sliced
- 15oz can of fire-roasted tomatoes
- 1 tsp of Italian seasoning
- ½ tsp of sea salt
- ½ tsp of pepper
- 3 cups of Randall Great Northern Beans, drained except for ¼ cup of liquid
- 2 cups of fresh baby spinach
- 2½ Tbsp of fresh basil, thinly sliced
- ½ cup of Parmesan cheese, grated
- 2 cups of mozzarella cheese, grated
Instructions
- Preheat the oven to 400 degrees F.
- Heat the oil in a large oven-safe pan over medium-high heat. Add the garlic and cook for 1 minute.
- Add the fire-roasted tomatoes, Italian seasoning, salt, and pepper and stir. Taste and add more salt and pepper if you’d like.
- Stir in the Randall Great Northern Beans and saved liquid and bring everything to a simmer.
- Add the spinach and let it wilt, then stir in the basil.
- Remove the pan from the heat and sprinkle the parmesan cheese and mozzarella over the top.
- Place the pan in the oven and bake for 5-10 minutes, or until the cheese has melted and the beans are bubbling. For an extra golden top, broil for 2 minutes.
