Our southwestern bean dip recipe is a protein packed snack that’s satisfying and healthy. The fully cooked beans and guacamole in this recipe provide a big dose of the nutrients your body needs to bounce back after a hard workout. Like beans, avocados are a source of fiber and potassium which your body needs to refuel and re-energize. You can use your own guacamole recipe or favorite store-bought brand along with your go-to taco seasoning to personalize the recipe. It makes a great dip with baked pita chips or as a filling for quesadillas.

Guacamole and Mixed Beans

Southwestern Bean Dip

2 cups Randall Mixed Beans, drained and rinsed
1 lime , juiced
3 tbs shallot, minced
1 cup guacamole
2 tbs mayonnaise
1 tbs taco seasoning
Kosher salt and fresh ground pepper, to taste

Mix all ingredients and serve with tortilla chip or use as a spread for making quesadillas.
