We love to eat seasonal recipes made with ingredients from locally owned growers. This time of year, it’s easy to get out into the community and get all the fresh ingredients you need. Do you know where your local farmers market is? This is a great time of year to check it out for the freshest produce at great prices. You can even bring the family along and enjoy a nice day outside!

From ripe tomatoes still warm from the sun to tender sweet corn and fresh basil, these delicious ingredients make us want to get in the kitchen and cook something cool, fast and fresh. Bean salads are always a hit even with our picky eaters, and they are easy to make. They are also a healthy addition to any outdoors picnic or summertime dinner out on the patio.

With our recent farmer’s market haul, we whipped up this mixed bean and corn salad, featuring some of our favorite summer flavors. Our mixed beans help make this fresh dish filling and substantial, while the tomatoes and sweet corn give the dish a subtle sweetness. Don’t forget to add your favorite light, oil based salad dressing! We’ve put a recipe together, but don’t hesitate to substitute your favorite summertime produce.

 

A delicious bean salad with Randall Mixed Beans and fresh corn

 

Mixed Bean and Corn Farmer’s Market Salad

 

2 cups of Randall Deluxe Mixed Beans, drained and rinsed
Fresh tomatoes, seeded and chopped
Sweet corn, cooked and cut off the cob
Fresh basil
Dressing–use bottled Italian dressing or your favorite vinaigrette. We like a light olive oil and citrus juice combination
Fresh garlic, minced
Salt and pepper, to taste

Mix everything together in a bowl and serve alongside your favorite summer dish. We paired it with grilled rock bass stuffed with lemon slices and parsley–yum!
