Bean salads hit the spot this time of year. They’re refreshing, tasty and super simple to whip up. This recipe is the perfect combination of flavorful vinaigrette dressing and smooth Randall Beans.
This savory summer bean salad is always a hit with our family and is a winner at big gatherings, too. The vinaigrette is easy to make, serves plenty if you make a big enough batch, and saves on clean up. It’s also a blast to make- just mix the vinaigrette right in your empty Randall Beans jar. Put the lid on and shake like crazy (kids love this part!)
Serve this summer salad up with a grilled white meat like chicken or pork for a fast and delicious meal. If you’re really adventurous, serve this bean salad chilled over a bed of peppery arugula and enjoy!
Ingredients for Vinaigrette Dressing:
1/4 cup red wine vinegar
1/4 cup white vinegar
2 Tablespoons water
3 Tablespoons minced red onion
2 Tablespoons fresh parsley finely chopped
Pinch of sugar
1/2 cup olive oil
Salt and fresh ground pepper to taste
Drain a 24 oz jar of Randall Great Northern Beans and place in a bowl. Rinse jar and place all vinaigrette ingredients in the jar and shake vigorously. Pour desired amount of dressing over beans (you will have some additional vinaigrette), stir and refrigerate for at least two hours. When you are ready to serve, taste salad; you might want to add additional vinaigrette.
This delicious bean salad saves precious time to be out in the summer sun. It’s a perfect dish for a family meal, so whip it up and enjoy.

Ingredients for Vinaigrette Dressing:
1/4 red and white vinegar
is the 1/4 cup of red wine vinegar AND 1/4 cup of white vinegar?
Or should it say 1/4 cup red OR white vinegar?
Those of use who really use a recipe and don’t go by feel, look, taste or experience need precise instructions.
