Randall Mediterranean Mixed Beans

1 24-oz. jar Randall Mixed Beans, drained and rinsed
1/4 cup extra-virgin olive oil
1/2 cup onion, chopped
1/2 cup celery, chopped
1 large garlic clove, minced
1 16-oz. can diced tomatoes, with juice
1 teaspoon salt (or to taste)
1 teaspoon sugar
1/2 teaspoon dried rosemary, crushed (1 teaspoon fresh chopped)
1/4 cup chopped fresh Italian parsley

Heat oil in a skillet over medium-high heat. Sauté the onion and garlic, stirring for 3-4 minutes until the onions begin to soften. Add the Randall Mixed Beans, tomatoes, salt, sugar and rosemary. Stir to combine and bring to a boil. Cover the skillet and lower heat to a simmer for 15 minutes. Stir in the parsley and serve. This recipe makes a tasty side dish for pork and chicken.
