RandallRecipes_1As a parent, you’re always trying to find ways of getting more healthy foods into your kids without them noticing. Maybe that means sneaking spinach into their morning smoothie, hiding broccoli in mac and cheese or substituting mashed cauliflower for mashed potatoes. But of course, our favorite is to sneak beans into meals. They’re full of fiber and protein, and their mild flavor and creamy texture make them easy to sneak into kid-favorite meals undetected.

In this case, we’ve gone with the ultimate kid favorite: pizza. We’ve added beans under the cheese on a fairly standard pepperoni, olive, pepper and mushroom pizza to appease the kiddies, but the sky is the limit! Use vegan cheese and go veggie–the beans will give you enough protein so everyone walks away full. Or go classy and upscale with a white pizza. Brush the pizza shell with olive oil and roasted garlic and top with great northern white beans and artichoke hearts. Or get everyone involved and create a make-your-own pizza bar. Put sauce, beans and cheese on your base, then let the kids load up their favorite toppings. The beans will be our little secret.

Great Northern Bean Pizza

Ingredients

  • 2 cups Randall Great Northern Beans, drained and rinsed
  • 1 10-12 inch unbaked pizza shell
  • 1-2 tablespoons oil
  • 1/3 cup grated Parmesan cheese
  • 1 16-ounce jar thick style spaghetti sauce
  • 1/2 green pepper, sliced thinly
  • 1/2 cup sliced ripe olives
  • 1/2 cup sliced mushrooms
  • 1 ounce thinly sliced pepperoni
  • 3 cups grated mozzarella cheese

Instructions

  1. Brush unbaked pizza shell with oil. Sprinkle 2 tablespoons of the grated Parmesan cheese on top of pizza shell.
  2. Place drained Randall Beans evenly over shell top with spaghetti sauce.
  3. Arrange on top the pepper slices, olives, mushrooms, and pepperoni. Sprinkle with rest of Parmesan and mozzarella cheese.
  4. Bake in 425 degree oven about 30-35 minutes until well browned.
  5. Makes 6 to 8 servings.
