
Hearty Bean and Cheese Casserole
Ingredients
- 12 ounces Randall Mixed Beans, drained and rinsed
- 1/4 cup chopped sweet red pepper
- 1 medium onion, chopped
- 3 tablespoons ketchup
- 3 tablespoons whole wheat flour
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups milk
- 1/4 cup slivered almonds
- 1 tablespoon butter (optional)
Instructions
- Preheat oven to 350 degrees.
- Combine Randall Beans, pepper, onion, ketchup, and flour in a greased shallow 2 quart casserole. Add 1 cup cheese. Pour milk over bean mixture, top with remaining cheese, and sprinkle with almonds. Dot with butter if desired.
- Bake uncovered for 30 minutes until sauce is thickened and bubbling. As it cools, the sauce will thicken further. Serves 4 to 6.
