The best kinds of recipes aren’t one-trick ponies.

No, the best kinds of recipes are versatile, able to be served in a variety of ways in a variety of occasions. This new recipe from our food blogger Kate certainly fits the bill.

High-end get-togethers or backyard BBQs. A dip, a spread or a sandwich. This great northern bean spread can do it all!

Another sign of a good recipe is that it is user-friendly and doesn’t require complex skills or procedures to easily knock out. This recipe checks that box too.

This recipe uses only a handful of simple ingredients, many of which you probably already have in your pantry or cupboard. Just make a quick trip over to your grocery store for some of the fresher ingredients like parsley, lemon, tomatoes and scallions and be sure to pick up a 48oz jar of Randall Great Northern Beans, now available at Meijer.

Once you have all you need, all you need to do is mix it all together in your food processor, transfer to bowl and garnish with your preferred toppings.

A recipe as simple and delicious as this is a great last minute fix for parties or BBQs, an after-school snack or even a light and healthy lunch spread between two pieces of your favorite bread or on toast.

Great Northern Bean Spread for Sandwiches or Dipping

Ingredients

  • 2 cups Randall Great Northern Beans, drained
  • Juice of 1 lemon
  • 1 small garlic clove, minced
  • 1 tsp. ground cumin
  • Salt & pepper to taste (about ½ teaspoon each)
  • 1 plum tomato, diced and seeds removed
  • ¼ cup chopped parsley leaves
  • 2 scallions, diced
  • Optional garnishes: sliced red onion, parsley, scallions, and a drizzle of olive oil

Instructions

  1. In a small food processor, combine the Randall Great Northern Beans, lemon juice, minced garlic, cumin, salt and pepper. Process for 1-2 minutes, or until smooth.
  2. Transfer to a bowl and stir in the diced tomato, parsley leaves, and scallions. Mix well. Spread on a sandwich or toast, or serve as a dip. Garnish with sliced red onion, parsley, scallions, and a drizzle of olive oil if desired.
