This chicken and biscuits recipe is one of our family favorites and the definition of comfort food. Every family has a slightly different recipe or take on chicken and biscuits, but we think ours is far and away the best. Why? We make ours with Randall Beans!

What makes mixed beans such a great addition is they serve as an additional source of protein and soak up all the tasty spices so you get more out of every mouthful.

The soup alone is amazing, but it is even better with a hot flaky biscuit. Chicken and biscuits… go figure!

Homemade or store bought, it doesn’t matter. Try serving this soup over top a biscuit, with a biscuit on top or even with one on the side. Whatever floats your boat, it is all just as good.

This recipe makes 6 to 8 servings. Perfect for feeding a large family at a gathering or for a little bit of home-cooked comfort on a rainy or overcast day.

Easy-Fix Chicken and Biscuits Soup with Mixed Beans


  • 4 1/2 cups Randall Ultimate 4-Bean Mixed Beans
  • 2 Tbsp. margarine
  • 2 small onions, chopped (1 cup)
  • 1 cup celery, chopped
  • 1 medium green pepper, chopped (3/4 cup)
  • 1 clove garlic, minced
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 bay leaf
  • 1 tsp. dried ground savory
  • 46 oz Chicken Stock (about 1 1/2 containers)
  • 1/4-1 tsp. hot pepper sauce, depending on preference
  • 6-8 chicken thighs, remove skin and extra fat
  • 1 10-oz package frozen corn
  • 1 10-oz package frozen okra
  • 1 cup parsley
  • 1 can refrigerated biscuits (optional)
  • 1 Tbsp. butter, melted (optional)
  • paprika (optional)


  1. In a large pot, melt margarine, and add onions, celery, green pepper, and garlic, and sauté. Stir in seasonings. Add chicken stock, hot pepper sauce, and chicken thighs. Simmer until chicken is tender, about 30 minutes. Stir in corn, okra, parsley, and Randall Mixed Beans. Continue to cook about 20 to 30 minutes until vegetables are cooked through.
  2. Serve as is or for a good variety “Top Hat” the soup with biscuits that have been brushed on top with melted butter and sprinkled with paprika. Cover simmering mixture with lid. Cook about 15 minutes until biscuits are done when tested with toothpick. In soup bowl place one piece of chicken, add soup, top with biscuit. Top with cheese if desired and serve hot.
