Craving pizza, but don’t want any guilt? This summery vegan-friendly white bean pizza from Simply Vegelicious is loaded with nutrition, from fresh vegetables and creamy avocado to protein-packed Randall Great Northern Beans.
• 1 pizza dough/bread crust base
• ¾ cup tomato sauce
• 1 cup Randall Great Northern Beans (for more protein, add up to 1 full 24oz jar), drained and slightly mashed
• 3 cremini mushrooms, sliced
• 1 small onion, sliced
• 1 carrot, grated
• ⅓ cup corn, cooked
• Mozzarella cheese (or vegan alternative) to taste, grated
• 1 avocado
• Salt to taste
Preheat oven to 450F.
Spread tomato sauce evenly on the crust/base.
Add Randall Great Northern Beans, corn, and other vegetables.
Sprinkle salt to taste.
Top with cheese.
Bake for 10 minutes or until cheese is melted.
Mash avocado and salt together until creamy.
Place avocado on top of baked pizza.
