Creamy, spicy, and loaded with fresh herbs, this white bean hummus recipe is one you’ll want to serve at your next party or get-together. It’s vegan-friendly, low in calories, and packed with delicious flavor. Serve with chips, veggies, or pita; the choice is yours!
Ingredients
• 1 24 oz jar of Randall Great Northern Beans, drained
• 1 Tbsp of fresh rosemary, chopped
• 1 jalapeño pepper, diced (remove the ribs and seeds for less heat)
• 1 garlic clove
• 2 Tbsp of dill pickle juice
• 1 Tbsp of lemon juice
• Kosher salt to taste
• Black pepper to taste
• 1-2 ice cubes
Instructions
Add all ingredients except for the ice cubes to a blender. Blend until smooth. Scrape down the sides with a spatula. Add 1 ice cube and blend. Check the consistency; add another ice cube and blend if the hummus needs to be thinned out.
Taste. If needed, add more lemon juice, pickle juice, salt, and pepper.
Transfer to a shallow bowl or plate and create swooshes with a spoon. Garnish with a sliced jalapeño, more fresh rosemary, and a good drizzle of extra-virgin olive oil.
