Sweet potatoes and white beans are not typical breakfast bar ingredients. Most recipes call for sugar and butter to create a classic breakfast bar texture. This recipe changes things up by using Randall Great Northern Beans and baked sweet potatoes to give you an even more delicious—and healthy!—alternative to traditional breakfast bars. Grab a glass of milk, a cup of coffee, or a cup of tea, and enjoy!

Ingredients

• 1 24 oz jar of Randall Great Northern Beans, drained

• ¾ cup of  cooked mashed sweet potato

• 2 eggs

• ⅓ cup of maple syrup

• ⅓ cup of oil

• 1 tsp of vanilla extract

• 1 tsp of cinnamon

• 1 tsp of baking soda

• ⅔ cup of all-purpose flour

• ½ cup of chocolate chips

Instructions

Preheat oven to 375 degrees F.

In a food processor, combine the Randall Great Northern Beans, sweet potato, eggs, maple syrup, oil, and vanilla. Process until smooth.

Add the cinnamon, baking soda, flour, and process until combined.

Add the chocolate chips and pulse a few times.

Spoon the mixture into a 9”×9” pan lined with parchment paper.

Bake for 20-22 minutes.

Let the bars cool, then cut and serve them. Store leftovers in the refrigerator.
