If you prefer less or no spice, the chiles can be reduced or left out; this tasty recipe will still be a hit. Serve with toasted sourdough bread for a delicious crunch.

Ingredients

For the beans:

• 4 cups of Randall Great Northern Beans

• 1 medium yellow onion, cut into wedges

• 5 cloves of garlic, smashed

• 1 sprig of rosemary

•1 bay of leaf

• 1 Calabrian chile

• 5 oz of baby spinach

• Sea salt

For the spicy herb oil:

• ½ cup of extra virgin olive oil

• 1 Tbsp of fresh rosemary, minced

• 4 cloves of garlic, thinly sliced

• 4 Calabrian chiles, thinly sliced (or ½ tsp red pepper flakes)

    Instructions

    Add the Randall Great Northern Beans, garlic, onion, rosemary, Calabrian chile, and bay leaf to a large pot and simmer until the beans are heated through. 

    While the beans cook, heat the oil in a small saucepan or skillet on medium-low heat. Add the garlic, rosemary, chiles, and fennel seeds. Cook until the garlic is a light golden brown and the herbs are fragrant. Set aside.

    Once the beans are warm, stir in the spinach and add salt to taste. Pour 2 cups of the bean and spinach mixture into a blender and blend until smooth. Pour this mixture back into the pot with the rest of the beans.

    Serve with the spicy herb oil poured over top. Serve with warm crusty bread.
