What do you do when you have only ten minutes to prepare a meal (or a side dish) but you want to make something healthy, delicious, and memorable? You make this Spanish salad featuring Randall Pinto Beans! Serve at room temperature with hearty sourdough or whole wheat bread for a refreshing springtime treat.


• 2 cups of Randall Pinto Beans 

• 1 carrot

• 1 red bell pepper

• 1 spring onion

• 3 Tbsp of garlic-infused olive oil

• 1 Tbsp of sherry vinegar

• 1 pinch of sea salt

• 1 dash of black pepper


Drain the Randall Pinto Beans in a fine sieve and transfer them into a large bowl.

Finely chop the carrot, the red bell pepper, and the spring onion (bulb and leaves). 

Add the ingredients into the bowl with the Randall Pinto Beans.

Add in the garlic-infused oil and sherry vinegar, and season with sea salt and black pepper.

Gently mix together, serve chilled or at room temperature. Enjoy!
