Light, fresh, healthy, tasty, and filled with herbs—what more could you want from a tabbouleh salad made with Randall Great Northern Beans in the early days of spring? Serve with crispy crackers or warm crusty bread, and welcome the warmer days with this delicious entree or side dish. Best enjoyed on the patio with friends!


• 2½ cups of Randall Great Northern Beans, drained

• 4 tomatoes, cut into ½-in pieces

• 3 cucumbers, cut into ½-in pieces

• ½ red onion, finely chopped

• 1 cup of parsley, roughly chopped

• ⅓ cup of mint, roughly chopped

Lemon Dressing:

• 2 Tbsp of lemon juice

• 4 Tbsp of extra virgin olive oil

• 1 garlic clove, minced

• ½ tsp of Dijon mustard 

• ½ tsp of kosher salt

• ½ tsp of black pepper


    Place dressing ingredients in a jar and shake well to combine.

    Place salad ingredients in a big bowl. Drizzle the dressing on top and toss well.

    Transfer to a serving bowl and serve!
