Why not get outside and enjoy the beautiful soon-to-be-full-summer weather with a family picnic? This white bean salad is a Mediterranean treat that combines protein-packed Randall Great Northern Beans with fresh veggies and herbs for a healthy, satisfying salad that can withstand traveling for a while in your cooler. 

Feel free to try different spice variations; oregano and cumin work great here as well, and a dash of crushed red pepper flakes will really bring the heat!

Ingredients

• 2⅔ cups Randall Great Northern Beans, drained

• 1 English cucumber, diced

• 10 oz of grape or cherry tomatoes, halved

• 4 green onions, chopped

• 1 cup of fresh parsley, chopped

• 15 to 20 mint leaves, chopped

• 1 lemon, zested and juiced

• Salt and pepper to taste

• Spices (1 tsp of ground thyme and ½ tsp of sweet paprika)

• Extra virgin olive oil 

• Feta cheese, optional

    Instructions

    Add Randall Great Northern Beans, cucumbers, tomatoes, green onions, parsley, and mint to a large mixing bowl.

    Add lemon zest. Season with salt and pepper, then add thyme and paprika.

    Finish with lemon juice and a generous drizzle of extra virgin olive oil (2 to 3 tablespoons).

    Give the salad a good toss to combine. Taste and adjust seasoning. Add feta cheese, if you like. 

    For best flavor, let the salad sit in the dressing for at least 30 minutes before serving.
