Maple Walnut White Bean Ice Cream

July is National Bean Month, and July 1st is National Creative Ice Cream Flavors Day. What a perfect reason to try this satisfyingly smooth and rich maple walnut homemade ice cream with white beans! It’s dairy-free, high in fiber, and uses natural sugars from fruit for just the right amount of healthy sweetness.

  • ⅓ cup of Randall Great Northern Beans, drained
  • ½ cup of toasted walnut pieces
  • ½ tsp of vanilla
  • ¼ tsp of maple extract
  • to cups of milk, if using a blender to combine (if using a food processor, you can eliminate the milk)
  • 3 small or medium bananas, cut into ½-inch chunks and frozen

Instructions

  1. Combine ¼ cup of the walnuts and all the other ingredients except bananas in a blender or food processor and blend until smooth. If you’re using a food processor, you won’t need milk; if you’re using a blender, add  ⅓ to ⅔ cups of milk. 
  2. After the beans and nuts are mostly smooth, add frozen bananas and blend until smooth. 
  3. Add more milk to the blended mixture as needed.
  4. Freeze until ready to serve.

Served topped with a small handful of the remaining ¼ cup of toasted walnut pieces.
