White Bean and Sweet Potato Burgers

Sweet potatoes in a burger? Yup. Trust us, the steamed, mashed sweet potato in these burger patties add an unbelievable creaminess and fluffiness to your burgers, and just a little bit of sweetness. Couple that with rich white beans and a hint of chili powder, and you have a burger that’s unusual and satisfying. Try pairing this one with a light green salad with an acidic dressing to cut the sweetness of the burger.

 

Tex-Mex Pinto Bean Burgers with Tomato Salsa

These spicy pinto bean burgers will stick to your ribs. The fresh jalapeno gives a fresh kick, while the layers of Mexican spices like coriander and cumin give a surprising depth of flavor. Add a fresh and bright tomato salsa bursting with cilantro and ripe cherry tomatoes and you’ve got a filling dish that’ll please vegetarians and omnivores alike.
