Frijoles Bandera literally translates to “flag beans”. So, as you may imagine, this dish is a salute to the flag of Mexico! Frijoles Bandera incorporates the colors of the flag (red, green and white) in creative and delicious ways, along with hearty Randall Pinto beans.
Freshly diced Roma tomatoes give this dish it’s red as well as sweet tomato flavor. Next, comes the green. For this part of the flag, we use serrano pepper to give the beans a little bite. Serranos look very similar to jalapenos but pack a little more punch, so be careful how much you add. Finally, white is represented in three ways. First, a little bit of diced white onion for crunch and flavor. Then finally, before you serve, garnish your pinto beans with crema (or sour cream) and a little bit of queso fresco.
Red, green and white: all the colors are represented! All you have to do is warm up the beans, mix and serve. Easy as that!
